Corn Chowder (vegetarian substitution)
In a large sauce pan over medium heat put:
4 Slices bacon cut into 1/2 inch strips (4 Tablespoons Oil)
Render until crispy remove and reserve and add in (have about 4 Tablespoons of Soy Bacon Bits on hand)
1 cup onions chopped
2 cloves of garlic pulverized
Saute until onions turn translucent add in
1/2 cup carrots chopped
1/2 cup celery chopped
Saute for about 2-4 minutes add in
1/3 cup of flour
Stir rapidly getting the flour to coat everything in the pan and soak up the oils then add in
2 1/2 cups cold chicken stock (vegetable stock)
Stir until all the flour is dissolved add in
1 bay leaf
1 cup of potato peeled and diced
1/4 cup red bell pepper diced
1 tsp Salt
1/2 tsp Pepper
Cobs of 4 ears of corn where the kernels have been removed and reserved
Allow to simmer until the potato is fork tender add in
Corn from the cobs used
1 cup of milk
Bring to a soft boil, allow to boil for 2 minutes remove cobs, and bay leaf. Serve topped with
Reserved bacon pieces (bits) and fresh sliced green onion.
For a no gluten recipe omit the flour, and mix with the milk 1/2 cup cornstarch.
