I've started cooking loads and loads in the last few months and thought I would share some of the recipes I have come up with! They are great for skint folk like me because I make things with what is left in the fridge and cupboards.
I make lots of soup so expect plenty of that Tonight I made a oriental mixed veg soup:
Oriental Veg Soup
YOU NEED:
2 leeks
2 onions
3 green peppers (I used green, but use whatever there is)
baby carrots
sweetcorn
chicken flavour noodles
3x chicken stock cubes
Soy Sauce
1 Lime
Coriander
Garlic
1. Chop up leek, peppers and onions. (not the baby carrots, they are fine as is)
2. Toss all of the veggies into soup pot.
3. Take out your noodles and break them up in the pot with the veggies.
4. Break the first stock cube into 450ml of boiling water, mix and pour over the veggies.
5. Repeat with second stock cube ^
6. With the third stock cube add the noddles flavouring, garlic, coriander and 5 table spoons of soy sauce. Mix well until everything is dissolved and pour over veggies.
7. Cut lime in half and squeeze juice into the soup.
8. Turn on the heat and bring to the boil.
9. Allow to boil for ten minutes, then turn down the heat and simmer until veggies are cooked and noodles soft. Stir occasionally.
Ta Da. Oriental Noodle Soup
And if all goes well it should look a wee bit like this:
